From 'Top Chef' to General: Chef Hung Huynh takes on modern Asian cuisine



It was only a matter of time before Chef Hung Huynh would become a Kitchen Superstar - beginning his training at the tender age of 11 in his parent's Vietnamese restaurant in Massachusetts. From there he rose through the ranks of some of the most prestigious kitchens in the world, including Per Se.

But it was his winning turn on Season 3 of Bravo's "Top Chef" that would catapult Huynh to culinary fame. Though he says, even without that experience, his drive would have paved his road to success. 

"I've been practicing my craft since I was very, very young. And I had one goal in mind which is to be the best I can be."

He has certainly achieved that goal, representing the U.S. at the Bocuse d'Or and joining forces with hospitality honcho Emm Group to open two Manhattan restaurants Catch and the General - serving as executive chef at both. 

"It's just really a great surprise that everything came around so fast in such a short amount of time." 

But, he knows it takes a village to raise a handful of successful restaurants, especially in the overcrowded New York dining scene. "It makes me smile, knowing what I create and what my team has helped me create. What I love about this is that I am able to teach 50 different staff to create what I can taste and create my palate and show them and teach them and have that translate to the guests, and that's an accomplishment for me."

The legions of repeat guests to the seafood spot, Catch, is what led to the opening of Catch Miami earlier this year. With remarkable discipline, Hunyh and The Emm Group opened The General on the very same day.

And the General immediately became one of New York's hottest restaurants. The 20,000 square foot, 300 seat multi-concept restaurant serves up modern Asian cuisine and live jazz three days a week.

But for all of his accolades and success, Huynh still remains dedicated to perfecting his craft, one dish at a time. 

"I think what makes me a good cook and a great chef, and what a great chef is, I have the attention to details. I can see a fish scale from across the room, and see what's wrong with a dish or how many grams of salt or pepper that's missing in that recipe."

With three restaurants under his belt, no one could blame Hung Huynh for taking a short break from the kitchen but he says, don't bet on it, "I can't sit down in an office, that's not me. I like to be in the action"



And for that, his devoted culinary followers are grateful.

Cooking Tips & Recipes :: Points To Consider When Evaluating Low Fat Air Fryers





Whereas a few years ago, hot air fryers were rare on the domestic marketplace, today, there are few individuals who haven't heard of low fat air fryers. How to build an outdoor kitchen, Part Two



When you are designing an outdoor kitchen, the first major decision to make is the type of grill or grills you are going to use. Once the built in grill has been decided and the various accessories chosen, the space a overall shape of the grill island should be considered. Often the shape the outdoor kitchen takes will be chosen by the space where the island will be constructed. Your specific use can create the shape, especially if you will use the counter for seating and serving guests. There are some obvious generalizations that evolve in outdoor kitchen design that we can discuss but the important result for you is to consider the decisions that work for other homes to allow your imagination to go to work designing your own perfect space.

Your outdoor kitchen design must serve your cooking needs but the grill island shape must also address your social needs. The images on the right are all in the same community, same type of home with the same layout. All three of these custom-built outdoor kitchens were built in essentially the same space. However, although the space was considered the individual needs of the homeowner make each space useful in different ways.

One outdoor kitchen may be used as a full kitchen with top range burners, grill, built in kegerator, sink, trash access and plenty of seating facing the television. This design has guests and home parties in mind. 

Another design may need much less and just a grill with a lot of counter space for preparation and serving is used.   The backyard chef allowing themselves a beautiful space to cook complimenting the lines of the home.

Third a homeowner who needs less seating with a sink, refrigerator and built in grill is designed more for a family dinner together out doors.

The same space and similar built in grills and accessories became very different outdoor kitchens based on the imagination of the homeowners needs.



It is important that you consider your needs when designing your own custom outdoor kitchen.  Imagine the last time you used your grill and ate outside.  What could have been better?  Where did you need more space for preparation or for seating?  Often I am in a customers backyard and s/he will walk me over to several neighboring backyard so I can see what other people have done with the same space available to this homeowner.  I work to impress the necessity to consider your own habits and usage in the design rather than how good you will look to your neighbors.

The easiest grill island to design is straight.  The idea of the straight grill island is similar to the cart grill that stays in one spot of the yard.  Instead of a standardized cart grill in the same spot, a little imagination can help create a grill island with a lot of space to serve and prepare your food for grilling.  Most of these designs have a wall of the house that is not being used.  Often I will look for the spot where electricity and plumbing is stubbed outside the wall or running in the wall to a kitchen or bathroom. 

This island was obviously built to fit the space onside to walls inside a covered patio.  The depth of the walls did not allow for the grill we chose so we invented a decorative movement that gives us the depth we need for the infrared grill and gives some character to an otherwise straight run of stucco.  Electricity and plumbing were already available and the window placement seems to be made for the positioning of the grill centered in the outdoor kitchen.  We covered up some damages to the wall with a backsplash and placed extra electrical boxes to allow for future use of lights, coffee pots, rotisserie motor and blenders.

The second unit looks like it is mounted to the wall of the house but it is not.  This unit is built to be self-supportive freestanding and was anchored to the wall of the house which does not extend to the end of the bbq grill island  We built the wall for the backsplash to allow electricity and lighting to be installed and to hide the pool pump that had been placed just outside the screen.  The poorly planned eyesore was hidden by the beautiful backsplash of their outdoor kitchen and by matching the stucco exactly, it appears to have been built with the original home plans.

This third example is like the first one built to fit a particular space under the patio roof.  The original cart grill was kept here in close proximity to the dining area outside.  We agreed the space was convenient and electricity was already there for the refrigerator.  The dining table placement just inside the patio and the walkway out of the gate had made the space pretty unusable.  The grill island turned a dead zone into a beautiful focal point of the patio.

Most profitable renovations - Dec. 7, 2006



NEW YORK (CNNMoney.com) -- Renovation costs are shooting higher and homeowners are getting a lot less bang for their remodeling bucks, according to a report by the National Association of Realtors (NAR) and Remodeling Magazine.

Last year, for example, adding a master bedroom suite to a house cost an average of $75,959 nationwide and boosted the home's resale value by $64,419 - that's 84.8 percent of the cost recouped. The same job this year cost a lot more - $94,331 - and returned just $68,458, or 72.6 percent.

The Harvard University Joint Center for Housing Studies estimates that Americans will spend nearly $160 billion for home remodeling projects over the next 12 months.

Many costs associated with remodeling have spiked. Last year, the national average for a midrange kitchen renovation was $43,862, according to NAR. But this year, that average cost had leaped to $54,241. Hard to make up that difference when NAR reported that home prices have actually fallen in the past 12 months.

A year ago, many remodeling jobs returned 80 percent of their cost or more when the owner sold the house. Some of the most profitable renovations, such as an upscale residing, actually paid off more - 103.6 percent - than they cost.

Other profitable renovations included midrange kitchen remodelings, which paid off 91.7 percent, and window replacement, which paid off 89.6 percent.

This year, an upscale residing only recoups 88.0 percent of its average cost of $13,499 (up from $10,393 12 months ago). That still made it the most profitable renovation.

A midrange kitchen remodeling returns 80.4 percent of its average $54,421 cost and a window replacement earns 85.3 percent of it $11,040 cost.

The least profitable renovation, again this year, is a home office remodel. It recoups only 63.4 percent of its cost.

There are lots of regional differences in the benefits of remodeling jobs. A midrange bathroom renovation pays off a lot more on the Pacific Coast (103.2 percent) than it does in the Plains states (74.8 percent) or the Great Lakes state (71.8 percent).

Part of the difference stems from the generally depressed home resale prices in the Midwest compared with the elevated home prices on the Pacific Coast.

In the Middle Atlantic states a vinyl siding replacement returns 92.3 percent of its cost, well above the national average of 87.2 percent, while in the Southwest the same job returns just 80.9 percent of the cost.

Generally, projects done in the Pacific states and the Atlantic South return a greater percentage of their costs than the other regions of the country.



Overall though, NAR president, Pat Vredevoogd Combs cautions homeowners to take the data with a grain of salt.

"Many factors affect a home's value," she said, "and, consequently, the resale value of any given remodeling project.

Traditional. The mirrored backsplash in this kitchen is simple, straightforward and stylish. A standard mirror has been applied along the countertop all the way to the bottom of the upper cabinets. Mirrored electrical outlet covers add a final touch for a cohesive look.

Antique. Mirror can be treated and aged to look antique, for a unique kitchen accent. Here the aged mirror backsplash has a darker hue and a worn finish.

Subway tile. Subway tile has a classic look that's become hugely popular. But if you'd like to go beyond basic white, mirrored tile could be the style you're looking for. Mosaic tile. Ramp up any kitchen design with mirrored mosaic tiles (tiles that are 1 inch by 1 inch) to create texture and pizzazz. Don't worry, you won't have to place each and every tile onto your backsplash. These tiny tiles come on mesh backing for easy installation.

Partial. If you would like to try a mirrored backsplash but are a wary of going overboard, start out small. This designer added a mirror just behind the range. While it's sure to show some stains, a standard mirrored surface is easy to wipe clean after meal prep.

Smoked. If you want your kitchen to make a stronger statement, use smoked-glass mirror instead of traditional silver mirror. Smoked glass has more of a dark bronze or black cast to it. It's usually the same price but has a very different, dramatic look.

  I want to share with you 5 ways to do some remodeling in your kitchen that will NOT break the bank. That's right. There are things you can do that will drastically improve the impression your kitchen has on people and will leave a couple of dollars in your pocket.

Some people really like painted cabinets. It is definitely a look. Most cabinets(that did NOT originally come painted) Have had varnish, lacquer,stain or all of these on them. That being said paint doesn't take very well to surfaces with those products on them without extensive prep work. In all honesty to really do a good job you will probably want to use a stripper followed by denatured alcohol to make sure the cabinets are free of those chemicals. If you are really after a quality job, It is not at all a bad idea to at all to leave this one to the pros. In other words,"Call your painter"

Would you believe a little thing like adding a new Tile backsplash can drastically change, for that matter improve the appearance of your kitchen. Replace Your Drawer Pulls

Really inexpensive and can drastically change your kitchen. Just changing your drawer pulls can do miracles and you are talking less than a hundred dollars for most kitchens. They make so many different drawer pulls and handles now and with the Internet what you can find is unlimited. Believe it or not I saw a couple on the Internet, I believe they were out in Arizona, They were actually making drawer pulls out of rocks and the thing about it was, They were cool as could be. Definitely worth considering if you are on a budget and your kitchen is tired. WAKE IT UP!!!

Do It All!!!



The thing is kitchens do get old and drab but you don't have to have 20,000 dollars to freshen them up and change the appearence all together. I guess I could have made 6 and 7 things to do to your kitchen on a budget. You can always paint the walls and yes, you can brake down and spend the money, and get a new kitchen. But that is not the direction we are going with this hub.

   You can do a couple of the things. Maybe tile the backsplash and get new drawer pulls or paint and new countertop. use your imagination and don't be scared. I really think people are afraid to do something in there kitchen. Plan it out, talk it over with the rest of the family and go for it. These things will give it a make over and you will still have a couple of dollars to go out to eat so you don't mess up that fresh kitchen.

Preserving the Best for a Century

The mist on the Delaware River swirls through the tree-covered Pocono Mountains, and Frank Sinatra's voice croons softly through the 100 year old lobby. This is the 21st Century?

Buckwood Inn

The stately Buckwood Inn (renamed in 1943 the Shawnee Inn) was the pinnacle of engineering modernity when it opened in 1911. New York businessman and engineer, Charles Campbell Worthington had been a resident of historic Shawnee-on-Delaware for over a decade when he made the decision to create his dream hotel and golf course in this quiet, bucolic countryside along the Delaware River. Constructed of 12 inch thick reinforced concrete, including the floors, Buckwood was the Pocono Mountains first fireproof lodge. The rooms were modern and luxurious.

The Delaware as a water trap

Famed golf course architect, and Philadelphia native, A.W. Tillinghast designed the 18-hole course on an island reachable only by a bridge that had to be reconstructed every spring. Tennis, concerts on the Grand Lawn, fishing, boating and swimming in the river were just some of the activities at Worthington's exclusive resort. Food supplies for the restaurant came from the Inn's own garden and surrounding farms. Fresh milk, cream, vegetables, meats, game and fish were all locally sourced.

The present is the past

With a century's passing, today's environmentally sensitive owners, Charles and Virginia Kirkwood, have not altered the character of Shawnee, except for exclusivity. As a teenager, Charles Kirkwood's machinist father was not allowed to drive onto the grounds when he dropped his son off for his summer caddie job. Now the once exclusive private golf course is public. Guests may no longer arrive for the entire summer season with servants, but the accommodations are still luxurious and state-of-the-art.

The long wide verandah overlooking the Grand Lawn and the river beyond is lined with rocking chairs. Cell phone use is not permitted in any of the Inn's public spaces, including the verandah. The spacious lobby and the landings on the staircase are decorated with antique craftsmen furniture and Asian antiques gathered by the Kirkwood's during their years of residence in Asia. A floor-to-ceiling bookcase is filled with history and literature for guests to read. There is only one public TV, and it's in the small corner River Room Piano Bar. Music from the 1930's onward played so softly in the background as to transport me to another time, and I could talk in a whisper while still being heard by my wife.

A pillow menu?

By modern American luxury resort standards, the Inn's eighty guest rooms are modest in size but offer all amenities, large screen TV, free internet access, desk, couch, pillow-topped beds, large windows, a Jacuzzi with the strongest water jets outside of a spa, tile bathrooms and large fluffy towels. With 12 inch thick concrete walls, once the door is closed the only sounds in the room are your own. I slept like a proverbial baby.

As if the room isn't comfortable enough, a "luxury pillow menu" rests on your bed, just below the four large fluffy ones already there. Would you like a Contoured Memory Foam pillow, a Beautyrest Allergen Reduction pillow or an Organic Buckwheat pillow? They, and three more varieties, are yours for the asking. If your children have trouble sleeping in a strange bed, arrangements can be made, complimentary, for a sleep specialist to read bedtime stories to your little ones.

In an adjacent wooded residential section of the historic village of Shawnee-on-Delaware (1740) guests who desire more space can stay in the Legacy Collection of vacation cottages or the Delaware Lodge. These custom designed, Arts and Crafts style houses provide spacious suites, full sized ultra modern kitchens, private patios with even the air-conditioning units designed as works of art.

Jackie Gleason as student

Most of the immaculate, now 27-hole, golf course is still on the island and reached by a bridge which is reconstructed every spring. Winter ice flows on the river make any other arrangement impractical. Golf remains the backbone of activity at Shawnee with a wide range of packages and tournaments. Arrangements for tee times and other golf activities are handled by J.J. Astomsky, golf sales manager, in the ground floor pro shop.

For newbies to the sport, there is the 9-hole Tillinghast Approach Course, the driving range and the Tillinghast Golf Academy, in the historic 1782 Red Brick House, under the able direction of PGA Golf Pro Jim Miller providing a number of training packages. The relaxed, friendly atmosphere should embarrass no beginner, after all in 1959 Jackie Gleason played his first ever golf game at Shawnee.

The River and Kid's Camp

Kayaking, canoeing, swimming in the Delaware River, tennis, volleyball, bike riding, fishing and hiking are complimented by winter skiing on nearby Shawnee Mountain. Especially for boating, the able staff at the Recreation Building will make arrangements for both individual and group activities. My first-time ever kayaking excursion, with Brandon, the cheerful recreation manager following alongside on this docile stretch of the river immersed in nature, was an exercise in relaxation.

Shawnee prides itself on being a family resort and while parents are playing golf perhaps the children would enjoy the activities at Kids Camp. Of course there is a beautiful heated indoor pool as well as a game room and gym.

Fun is hard work

After a day of physical activities, or just a lazy afternoon catching up with a good book on the verandah, why not visit the Spa Shawnee and Salon which opened in 2007. Like everything in this green resort, the Spa uses only the best in all natural and organic products to pamper and rejuvenate.

Shawnee Playhouse

Cultural activities have been part of Shawnee even before the resort. C.C. Worthington constructed Worthington Hall (1904) in the village as a venue for concerts, lectures and the Shawnee Playhouse. The resort's second owner, Fred Waring, used the hall for his nationally broadcast radio show featuring his big band, The Pennsylvanians, and major stars of stage and screen. The Kirkwood's fully restored the National Historic Register structure and once more it's a venue for concerts and the Shawnee Playhouse.

Community concerts by local groups take place on the Grand Lawn every Wednesday evening along with a farmers' market featuring members of the Foodshed Alliance, many of whom provide the fresh ingredients for Shawnee's restaurants. On many evenings live music is featured in the dining rooms.

Environment First

The restaurants at Shawnee epitomize the very soul of the Slow Food movement. Locally sourced products from tomatoes to lamb are used whenever possible. The resort's own 3000+ square foot farm, on the golf course island, is a model of chemical free growing methods.

An apiary, under the direction of horticulturalist Erin Schroll, provides honey for sale in the gift shop, as an ingredient in some of the craft beers and many uses in the kitchens. Maple trees on the grounds are tapped every spring, and an orchard has just recently been planted. The breakfast granola, chock full of more nuts than oats, highlights Shawnee's aromatic honey and maple syrup.

The resort's own ShawneeCraft® Brewing Company produces five premium beers and ales year round and 15 seasonal varieties in a brewery made from a reconverted ice skating rink using recycled equipment throughout.

Pennsylvania's Best

The seasonally adjusted menus in both the resort's restaurants, the Inn's River Room, and the separate Gem and Keystone Brew Pub, feature the best Pennsylvania offers. Succulent lamb chops stuffed with Shawnee's own vegetables, a leg of Duck Confit bursting with flavor and falling off the bone paired with a salad of local greens and Shrimp Tandoori redolent with spices, an homage to Chef Gaurav Navin's native India, are a small sample of the flavors flowing from this imaginative kitchen.

The Gem and Keystone Brew Pub's Chef Dan Stripp builds his menu around American fare that highlights items from the wood-fired grill and incorporates ShawneeCraft® beer. The wood grilled bruschetta topped with tomatoes from the farm, basil from the herb garden, Pennsylvania garlic and local feta is inspired. The slow smoked baby back ribs glazed in a rich beer based barbecue sauce are the best I've eaten anywhere.

Has your mother-in-law moved into your home with you, your spouse, and your children? This does not have to a major living arrangement problem for you, your family, and your mother-in-law. Not having these amenities will also help the mother-in-law save money on the remodel, which could be a major help if she is living on a fixed income.



On the other hand, the mother-in-law might prefer quarters separate from your home, which means she will be living on your property but in a separate building. This will cost more, since a kitchen and laundry room will need to be added, but it still provides your mother-in-law with a feeling of freedom and independence.

Around the time of the Great Recession, homes started to get smaller. In 2007, they averaged 2,500 square feet. By 2009, they averaged 2,362. But then they grew again as the economy began to recover and in 2013, the average home size was 2,679 square feet.

Why are new homes getting so big? According to the NAHB, people who qualify for a mortgage these days have higher incomes, more money to put down and higher credit scores.



"It's not because people are now mad about McMansions again," the NAHB's Rose Quint said. "It's the mix of buyers that are still in the market that's driving the characteristics of homes being built now. Buyers that don't have the means don't have access to mortgages right now. Wealthier buyers are more likely to have the income and credit scores for a home and the result is that the homes being built are bigger."

However, she thinks that if home buying becomes more accessible to more middle income buyers, the square footage will recede again. After all, 57 percent of buyers would like a single-story home, according to the survey.

How Much Does a Bathroom Renovation or Remodel Cost?



One of the most popular types of renovations is some type of bathroom renovation. Bathroom renovation, or a bathroom remodel, is a broad term. In one sense, you could argue that "bathroom renovation" is overly-broad since it covers so many options.

When someone says they are renovating a bathroom they could mean that they are just changing out the faucets, shower head and toilets. Or they could mean that they are replacing the bathtub and adding a new vanity. One of the biggest factors in the cost of a bathroom renovation is the cost of materials.

Materials are the "stuff" we put into our new bathroom, and of course "stuff" costs money. How much money does this stuff cost?

It varies and depends largely on your tastes.

Labor can account for a large portion of your budget. Upwards of twenty percent of a bathroom remodeling budget. There are two ways you can save money on the cost of labor.

First, if you are using a contractor, or multiple contractors, get a decent number of estimates. Think of estimates like comparison shopping. Chances are you check out Amazon, Costco, and Best Buy before you bought your last TV. Why wouldn't you do the same for a bathroom remodel?

The common wisdom dictates that you should get at least three estimates. For larger jobs, get more than three. Around 5 estimates. And if you get three estimates and you aren't happy with any of the contractors you talked to? Get three more. When you are shopping for contractors don't just settle.
